Margaritaville University: Grapefruit-Juicy Fruit Burger

Last month the Margaritaville University college ambassadors were challenged to submit their best burger recipe. A hungry panel of Margaritaville judges chose 5 winners to be featured on Margaritaville.com.

Best Thing About Being Part of Margaritaville University: I love the sense of community. Everyone supports and encourages one another and shares brilliant ideas of how we can all share the Margaritaville lifestyle!

Inspiration for your recipe: To be honest, I don’t really eat fish. My mom was actually my inspiration for this burger. She doesn’t eat meat, but really enjoys fish. She is constantly creating healthy, yummy recipes that are vegetarian and vegan friendly.

If you could enjoy this burger anywhere in the world, where would you be: I would be in Cane Garden Bay. My family has sailed in the BVIs for years, and I love the laid back attitude and crystal clear waters!

Favorite Jimmy Buffett Song: Little Miss Magic. My dad played it for me all the time when I was younger, and it was the father/daughter dance between my mom and my grandfather at my parents’ wedding. I also love the lyric, “If we weren’t all crazy, we would go insane.”

Make Sarah’s Grapefruit-Juicy Fruit Burger!

Mahi Mahi Patties:

  • fresh mahi mahi
  • bread crumbs
  • mayonnaise
  • key lime juice (or regular lime juice)
  • sea salt
  • black pepper
  • garlic powder

Mix all ingredients together and form into patties. Grill until the fish is completely cooked through.

Jalapeño Grapefruit Mayo:

  • mayonnaise
  • fresh grapefruit juice
  • fresh cilantro leaves
  • fresh jalapeño, diced
  • garlic, minced

Combine all ingredients in a bowl and mix thoroughly.

Add the cooked mahi mahi patty to a Sesame Bun or bed of Butter Lettuce. Top with a generous spoonful of Jalapeño Grapefruit Mayo.
