If there is one thing 2020 can’t stop, it is pumpkin spice season. From lattes and shakes to muffins and cakes, this comforting fall flavor is just what we all need right now. And the only thing that can make a zesty pumpkin treat better is an island twist. Because, as we all know, everything is better when it’s made in the Margaritaville state of mind.
Tropical Pumpkin Spice Bread
- 3 cups all purpose flour
- 1 tablespoon cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups white granulated sugar
- 1- 15 ounces can of pumpkin puree
- 4 large eggs
- 1/2 cup oil
- 1/2 cup orange juice
- 1 cup shredded coconut
- 1 cup coarsely chopped walnuts
- 1 teaspoon vanilla
Combine flour, cinnamon, baking soda and salt in a large bowl and set aside.
Combine sugar, pumpkin puree, eggs, oil, vanilla and orange juice, and vanilla in large bowl and beat until just blended. Add coconut, walnuts and flour mixture. Pour into two, greased 8″ loaf pans and bake in a preheated 350-degree oven for 50-60 minutes.
