February is one of our favorite months since it holds both Valentine’s Day on the 14th and National Margarita Day on the 22nd. So to sweep your sweetheart out of their flip flops this month, try this tasty treat.
We mixed the ever so popular Valentine’s Day strawberries, symbolizing love with their heart shapes and red color, with our signature Margaritaville Margarita Mix and Tequila.
Enjoy on Valentine’s Day and repeat for National Margarita Day!
Ingredients:
- 15.25 oz white cake mix
- 3 eggs
- 1/4 cup vegetable oil
- 1 1/4 cup Margaritaville Margarita Mix
- 3 oz box lime gelatin
- 1/2 cup boiling water
- 1/4 cup Margaritaville Silver Tequila
- 3 oz box strawberry gelatin
- 1/2 cup boiling water
- 1/4 cup Margaritaville Silver Tequila
- 8 oz whipped topping
- 3 oz box lime gelatin
- Margaritaville limes and strawberries for toppings
Directions:
Preheat the oven to 350 degrees. Spray a 9X13 baking dish with non-stick baking spray and set aside. In a large mixing bowl, add the cake mix, eggs, vegetable oil and margarita mix. Beat the ingredients together until smooth and pour the cake batter into the baking dish. Bake for 30-35 minutes and let cake cool. Next, poke holes all over your cake.
In a medium saucepan dissolve the lime gelatin in 1/2 cup boiling water, then add in the 1/4 cup tequila; mix well. Pour into a bowl set to the side. Repeat with the strawberry gelatin. Drizzle both gelatin mixtures over entire top of cake. Refrigerate cake for 3 hours.
Lightly stir in half of the lime gelatin packet into the whipped topping. Now top cake with the whipped topping and top with lime zest, strawberry slices.
