Celebrate World Egg Day By Cracking One Into Your Cocktail

In honor of world egg day, may we suggest doing the best thing one can do with an egg? Clearly our answer is to mix it with alcohol. Trust us, once you try one of these four delicious, egg-based cocktails, you’ll be hooked.

THE ROUND ROBIN

To make this sweet classic, you need a little bit of bitter, a little bit of sweet and one egg.

  • 1 oz absinthe
  • 1 oz brandy
  • 1 tsp superfine sugar or simple syrup
  • Dash of blood orange bitters
  • Ice

Directions

Combine egg white, absinthe, brandy, sugar or simple syrup and bitters in a cocktail shaker. Fill the shaker with ice. Shake vigorously until condensation beads up on the outside of the shaker, at least 30 seconds. Strain contents into a wineglass and serve.

SPICED PEAR GIN FIZZ

  • 1 large egg white
  • 3/4 oz spiced pear simple syrup*
