Last month the Margaritaville University college ambassadors were challenged to submit their best burger recipe. A hungry panel of Margaritaville judges chose five winners to be featured on Margaritaville.com.

Best Thing About Being Part of Margaritaville University: I love being in the position to share the Margaritaville state of mind with my peers. As a rep, every interaction with fellow students ends in a smile and their apparent relaxation, even if just for a minute. I wouldn’t change it for anything!

Inspiration for your recipe: I grew up in the Southwest eating hatch green chilies and bison. Going to school in Kansas, I always miss those flavors that have come to represent the relaxation and adventure of the mountains to me –a version of my Margaritaville. I also LOVE food and experimenting with flavor profiles. For this challenge, this recipe just made sense as a representation of me and where I come from.

If you could enjoy this burger anywhere in the world, where would you be: I would be camping near an alpine lake on a warm summer day, grilling by the water with friends, family and my dogs.

Make Emma’s Southwestern Sunrise Burger:

Ingredients:

  • Buttered and toasted brioche bun
  • Bed of arugula
  • Bison burger stuffed with goat cheese
  • Roasted hatch green chilies
  • Sunny side up egg
  • Margaritaville tequila lime sauce

Inspired by the adventure in my southwestern Colorado hometown, this burger is built from the bottom up, like climbing a mountain. First, take it easy with a buttery brioche bun, topped with peppery arugula because every good trail has some roughage! Bite into a spicy green chili and you are on your way to the peak! A combination of juicy bison and creamy goat cheese gives you the last push to the top… and an explosion of the sunny side up egg is like watching the sun come up to shine over the valleys below as you stand in heaven at the peak.

Relax until the tequila lime sauce hits to get the party started. Rinse with your beverage of choice and repeat!
